Easy to Make Stuffed Bell Peppers

These are more assembly instructions rather than an actually recipe...You could even file it under "super lazy meals"...The thing I like most about it though is that everyone in the family likes it...and that is always a bonus...


All you need is:
Roughly a pound of ground beef or turkey
4 to 6 bell peppers depending on the size,
Enchilada sauce,
Shredded cheese of your choice
Box of dirty rice mix (and whatever water/oil is calls for on the box)

Cook dirty rice and meat per instructions on box...Cut bell peppers top to bottom in half, remove seeds and wash, line a pan with foil for quick clean-up and spray with cooking spray, Spoon cooked dirty rice mixture into peppers and place pepper side down into lined pan, pour enchilada sauce over the stuffed peppers then top with shredded cheese.

Cook in 350 oven for about an hour.


Makes about 8 stuffed pepper halves and can be served as a complete meal or as a side.

Oh,Kelsi, I'm trying this recipe this week! I love stuffed peppers but usually put an Italian spin on them. This sounds soooo good! Thanks lady!
