Oven Roasted Tomato Bisque

Oven Roasted Tomato Bisque

  • 2 lg cans (28oz) peeled whole tomatoes, drained and seeded (reserve 3 cups of liquid)
  • 2 1/2 Tbs brown sugar
  • 1 medium onion finely chopped
  • 3 cups chicken broth
  • 1/4 ts ground allspice
  • 3 Tbs tomato paste
  • 8oz thickening cream
  • 1/4 cup or about 10 lg leaves basil leaves

Preheat oven to 450F. Line a cookie sheet with foil and spray with nonstick cooking spray.
Arrange seeded tomatoes in a single layer and sprinkle with the onion and brown sugar.
Bake for about 30 minutes or until all liquid is evaporated and tomatoes begin to color.
Allow to cool slightly, then remove from cookie sheet and put into a blender...Add a dash of chicken broth to help liquefy roasted toms...I do this usually in 2 small batches.
Combine liquefied toms, tomato paste, remaining chicken broth, reserved tomato liquid and allspice to crockpot and allow to cook on low for 8hrs (high for 4hrs)
I add my basil into a "tea ball" and drop into crockpot during the last hr..with 30minutes.
to go, finally add cream and mix well.

Serve with crusty bread and enjoy.


For our family this "soup" is the must have on our Thanksgiving day menu...It would just not be Thanksgiving around here without it...Even when we have eaten with friends in the past, my oldest daughter begs me to make it to take along...So of course I do *smiles*

Taco Salad with Homemade Tortilla Bowl


I have shared this recipe before but it was part of a rather long post last year, so I thought I would share it again just as a stand alone recipe.

TACO SALAD BOWL


Ingredients: 
Extra Large Flour Tortillas
Pam none stick spray (I use canola)
1 pk Yellow Rice (I use Dixie Land because it has only 40mg Sodium content and I omit the additional salt the instructions tell you to add to boiling water)
1 pk Low Sodium Taco Mix (water and oil as per directions on pk)
1lb of ground beef (or you can sub ground turkey or even shredded chicken)
1/2 head of  Diced Lettuce (I used romaine for the one pictured because it is my fave)
1 or 2 fresh diced tomatoes
1/4 cup fresh cut green onion
shredded cheese (we like sharp cheddar)
Sour cream
Salsa of your choice

Pre-heat oven to 400F ... Invert small cereal bowls onto a cookie sheet (however many you want Tortilla bowls) Spray Tortillas with "Pam" front and back, drape one Tortilla per bowl...Place in oven and allow to cook for 15 minutes, or until golden around the edges...should give a nice hollow sound when tapped on.

Cook Yellow Rice as per packaging (again, I omit adding the salt)

Make the taco meat with the ground beef (or sub meat) according to packaging.

Assemble in this order:
Bowl, Rice, Lettuce, Meat, Cheese, Tomato and/or Salsa, Sour Cream, Green Onions.

You can add re-fried beans before the rice.... Avocado slices between the cheese and tomato or on the side.

Homemade Baked Beans in the Crock-pot

It has "bean" awhile since I shared a recipe with yall and this is a newly tweaked family crock-pot favorite...I find my 3.5qt or 2.2lt is the perfect size and shape for this job...With my large oval shaped one, the beans spread out too much and do not get that true stewed effect you want for baked beans.

Homemade Baked Beans

4 Cans of pinto beans (I have found I get the best results if I use Bushes Beans - Low Sodium)
1 1/2 cups brown sugar
1 1/2 cups ketchup
3 Teaspoons yellow mustard (or in my case 3 good squirts and call it good)
1 1/2 Cups Water
1 Pound of bacon (I use low sodium bacon)
1 Diced medium yellow onion
1 Large green sweet bell pepper (capsicums for you Aussies reading this)
3 Large diced garlic cloves

Optional additions:
Salt and Pepper to taste...I find I don't need either as this recipe is packed with plenty of good flavor without them.
3 Teaspoons Liquid Smoke...This gives the beans a good BBQ flavor, but they are delish with or without it depends on your family's tastes.

Empty pinto beans into large colander and rinse thoroughly with cold water, let drain and add to crock pot.

In a mixing bowl combine Sugar, Ketchup, Mustard and Water...If you are using the liquid smoke add it during this step also...pour mixture over beans and stir lightly.

Chop bacon in to 1 inch strips and fry until slightly crispy...drain on paper towel to remove excess grease...save 2 spoons of bacon grease in pan and saute onion, garlic and bell pepper....reduce heat and add lid to pan to sweat for an additional 2 minutes.

Mix bacon and sauted veggies to crock pot and mix thoroughly.

Cook on high for 1 hr then reduce setting to low for an additional 4 to 5 hours depending on your individual crock pot.

Easy to Make Stuffed Bell Peppers

These are more assembly instructions rather than an actually recipe...You could even file it under "super lazy meals"...The thing I like most about it though is that everyone in the family likes it...and that is always a bonus...


All you need is:
Roughly a pound of ground beef or turkey
4 to 6 bell peppers depending on the size,
Enchilada sauce,
Shredded cheese of your choice
Box of dirty rice mix (and whatever water/oil is calls for on the box)

Cook dirty rice and meat per instructions on box...Cut bell peppers top to bottom in half, remove seeds and wash, line a pan with foil for quick clean-up and spray with cooking spray, Spoon cooked dirty rice mixture into peppers and place pepper side down into lined pan, pour enchilada sauce over the stuffed peppers then top with shredded cheese.

Cook in 350 oven for about an hour.


Makes about 8 stuffed pepper halves and can be served as a complete meal or as a side.

Crockpot meal - Braised Ribs in Tomato Gravy.

With the cooler weather moving in for most ppl in the northern hemisphere, it is time for some good old stick to your ribs, hearty meals....This recipe certainly fits the description, not to mention, what we are having for dinner tonight...I hope you try it and enjoy it as much as we do.

Braised Ribs in Tomato Gravy
Servings depends on size of rack of ribs…Average 2 or 3 ribs per person

Rack of Ribs ( Beef gives a good hearty flavor or you could use pork)
Salt – Pepper – All purpose seasoning
2 28oz Cans Crushed Tomatoes
2 large yellow onions (sliced thick)
2 or 3 smashed garlic gloves.
Mushrooms (prefer fresh but canned will do)
Olive Oil

2 cups of Cooked Rice...(cook this at the end to server with the ribs and gravy)

Cut ribs apart and rub down with salt, pepper and All purpose seasoning. In heavy pan ( I use cast iron) heat a dash of olive oil. In batches, sear ribs on all sides, placing in a platter when done.

Using same pan, lower heat and add another dash of olive oil, add sliced onion and garlic, cover and sweat for about 5 minutes. While the onions are sweating, peel mushrooms and cut in half. Increase heat and add mushrooms to onions and garlic, lightly brown.

Add onions, garlic and mushrooms to crockpot (or Dutch Oven)

Add 1 can of crushed tomatoes to the crockpot and stir in with other veggies.

Add Ribs crockpot and pour second can of crushed tomatoes over them to cover.
Cook on low for 6 to 8 hrs or on high for 4 hrs.

30minutes before it is ready, taste for flavor, if not rich enough (pork ribs give a milder flavor) add one packet of brown gravy mix to ¼ of water and make a paste, add to crockpot…Increase heat to high.

Serve over cooked fluffy white rice….You might need to serve biscuits or crusty bread on the side to sop up the delicious gravy.
